What I am eating at the moment...

Hiya everyone,

I am not intending to write this post about what I am literally eating 'right now', but simply about what food I am loving at the moment!

As you may well know, I am quite health conscious and have anxieties about my health. For me though, balance is literally the key and is how I decide what to eat. I definitely don't agree with dieting but like I said, just having a balance of everything.

So here are some of the things I am eating constantly at the moment and a few meal ideas ready for the summer (I have included a few Instagram photos as I am constantly posting yummy food over there!):

Sweet Potato:
At the moment, sweet potato is probably my favourite food and I am eating it on a daily basis! There are lots of different ways to prepare a sweet potato but for me, I want something quick and easy!

So, one of the ways I like to eat my sweet potatoes is by roasting them! This takes a little bit of effort but is still super easy. I just peel and chop the sweet potato, whether I make longer, thin, fry like potatoes or just chunky cubes. I then put them on a tray with some olive oil  (usually garlic infused for more flavour) some sea salt and some pepper. I then whack them in the oven at about 190 degrees for around 15/20 minutes depending on the size of the potatoes.


And this is the outcome! Yummy potato! 

Previously, I have peeled, chopped and boiled sweet potatoes and then mashed them, however, popping them in the microwave (stab the with a knife about 6 times and wrap in kitchen roll) for around 5 minutes (double if you have two potatoes) and then scraping the potato out of the skins once it is cooked, is just as tasty and takes half the time and effort. This microwaving method (pictured below with tuna, spinach and my ultimate homemade dressing) is my go - to way of preparing and eating sweet potatoes purely because it is sooo so easy to do.


My Ultimate Homemade Dressing:

I find leaves such as spinach, kale and rocket totally bland and boring. The again, I never really know how to jazz them up and make them more appealing to my tastebuds in a healthy way. Recently I decided to chuck a load of ingredients into a jug, whisk them together and see what happened..

The outcome, to my surprise was delish! I don't use exact measurements, I just make the dressing to my personal taste:

- Olive oil (about 2 table spoons)
- Honey (about 1 tablespoon)
- Cider vinegar (a really small dash)

These three ingredients, plus some chopped spring onions, make a really good, and fairly healthy dressing. I love this - I can't quite put my finger on why, or what it tastes like but it is almost quite sweet (??)










Oats:

Such a simple ingredient, yet super good for you, super filling, and surprisingly yummy!

I eat oats, again, in many different ways..

Overnight oats -

Oats and Yoghurt - As a snack, when it is a while from meal time and I need that hole filling, I will get some natural yogurt, add some oats (as many as you fancy) and then drizzle with a bit of honey - sorted!


To this, I usually add some fruit (whatever is in the fridge - often blueberries or raspberries), as this is such an easy way to add texture AND to eat your fruits!




A perfect post gym break:

I am totally into the gym, I am really keen to get fit and toned and live a healthy lifestyle. When I get back from the gym, I love to fill my belly with a scrum my, but healthy, breakfast. 

Mashed avocado and a poached egg on toast (I eat both brown and white bread depending on what has been baked), is seriously delicious! I sprinkle a little bit of pepper, salt and some flax seed over the egg and toast and tah dah - a perfect, balanced breaky! 



More eggs:

Recently I have also been really obsessed with eggs! Making a soft boiled egg is seriously tricky! It all depends on the size of your egg, the amount of water, the temperature of your egg etc etc.

I usually boil my eggs for 2-3 minutes for a cooked white and soft yellow however, this is unlikely to work for everyone!

This is such a simple lunch time meal - egg, a homemade toasted roll and a random extra of beetroot on the side!



Cafe Nero Sicilian Lemonade:

This drink is probably one of the best finds I have ever made. The weather is looking good at the moment and it is technically 'Summer' in the UK so this drink is utterly perfect. It is completely refreshing and totally tasty.



Sunbites Crackers:

I actually discovered these by chance and not by choice. After trying them, I was instantly drooling.. I was quite enjoying the bog standard chilli Sunbite crisps, but these.. they are something else! Who knew you could be so positive about a sweet chilli snack ey?



And that concludes my favourite foods at the moment.. Obviously I am not just living off sweet potato, oil/honey dressing, egg, oats and sunbite crackers, noo.. but these are my current, lets say, 'go to' foods!
